In the truest sense, muesli is a raw mixed grain cereal with the addition of options such as fresh or dried fruit, nuts, and seeds. Sans sugar and oil, you could safely say it is the original granola. About a year ago I started developing my own version and with a few tweaks it remains my standard morning breakfast. Without a doubt, the grains, nuts, and seeds work to keep my brain firing, my attitude positive, and they sustain my energy level.
Preparation only takes a few minutes. The grains, seeds, and dried fruit are assembled ahead of time, and given a short soak in boiling water. In 20 minutes these fiber-rich nutritional powerhouses expand, soften, and cool enough to store overnight in the fridge for use the next day. During the hot summer months, chilled muesli is extremely refreshing; in cooler weather it’s warming and nutritious when heated.
I like mine with a dollop of plain yogurt, perhaps fresh berries, banana or other fruit, and a bit of jam or agave. I rely on it these days because a small bowlful in the morning keeps me going well past the noon hour. It’s my happy meal!
2 tablespoon quinoa, toasted
2 tablespoon multi-grained blend (look for one with flakes which will absorb quickly)
2 tablespoon quick oat flakes
2 tablespoons bulgur wheat
2 tablespoon toasted buckwheat (kasha)
2 teaspoon chia seeds
2 tablespoon golden raisins or other dried fruit and or toasted nuts
1/4 teaspoon cinnamon
1-3/4 – 2 cups cup boiling water
- To toast the quinoa: place the quinoa in a small heatproof bowl, microwave for about 1 minute, stirring once or twice. It can burn, watch carefully. Bring 2 cups water to a boil.
- In a heat-proof 3-cup or larger container with a lid, measure in all ingredients except the water, stir or shake to combine. Pour in the boiling water and carefully stir or shake thoroughly to distribute all ingredients. It will be very hot. Cover and let stand for about 20 minutes. Top off with a bit more hot water if it looks dry, stir or shake again, cool a few minutes longer and chill overnight in refrigerator.
- Serve cold or hot with yogurt, fresh berries or other fruit if desired, top with favorite sweetener such as a drizzle of honey, agave, or jam. Yield: 3 or more servings.
